Hi guys,
I just cannot help but butternut, spaghetti, acorn and other winter squash is all that comes to mind when I think about cooking now that the leaves are turning yellow, orange and red. Plus, in a stew it is all in one pot and you can enjoy your healthy meal without having to sweat over the stove for hours. Just chop, mix, and bake. Who would not want your life to be like that. Simple and no hassle…well since life can get tricky one-pot meals should not be. So here is our new addition to our POPN Paleo kitchen – Butternut Pork Stew. Classic ingredients, easy to make, and 6 six pack abs friendly without cutting any flavor.
Ingredients (makes 6):
- 1 large butternut squash, peeled and cubed
- 1.5 lbs. pork tenderloin, cubed
- 2 tbsp. Organic Ground Mustard Seed
- 2 tbsp. Organic Celery Seeds
- 2 tbsp. Organic Bay Leaf
- 2 tbsp. Organic Garlic Granules
- 1 tbsp. Extra Virgin Olive Oil
- 1 large red onion, chopped
- 16 oz. low-sodium organic chicken broth
Cooking Steps:
- Using a cast-iron dutch oven mix ground mustard seed, celery seeds, bay leaf, garlic granules, olive oil, and onion. Simmer on low heat until onion golden brown.
- Fold in stock, squash, and pork tenderloin. Cover and cook on low for 2 hr.
- Enjoy!
