Well, this is the time for Asian inspired meals. I was walking in TJ’s and saw shaved beef packages lined up on the shelf. With their bright red color and lean mean look I could not help but try out Soy Substitute recipe with Orange undertones. This came our a great light meal for lunch, dinner and I even warmed up leftover for breakfast with egg. Here is it, another great addition to Free2BFit Gluten Free Paleo recipe box – Citrus Beef and Zucchini Stir Fry. Plus this one only takes you 15-20 min to make.
Ingredients:
- 1 serving Soy Sauce Substitute, reduce stock volume to 1 cup
- 1/2 cup orange juice
- 1 lb. shredded beef
- 2 large zucchini, julienne cut or sliced
Cooking Steps:
Set a Cast-Iron Dutch Oven on low heat. Add Soy Sauce Substitute and fold in beef. Simmer for 5 min while mixing periodically. Fold in julienne zucchini, cover and cook for 8-10 min or until beef is cooked through and vegetables are tender. Then open the Cast-Iron Dutch Oven and cook on high for 5-8 min so that some of the water evaporates. Enjoy this low carb and Gluten Free Paleo meal any time of the day.
