POP Nutrition: Tender Oven Roasted Pork Ribs With Sweet Potatoes, Zucchini, and Squash

Hi guys,

I have been craving meet – beef, pork, turkey, chicken. The other day when walking by an Organic Market (it comes over on Saturdays) I asked about a young chicken in hopes of making rotisserie at home but they were out but they did have pork ribs. I went for it. I came home and marinated them for 48 hr. And then decided to bake in the oven. They came out so tender, so juicy, and the meat fell right of the bone. Hmm…hmmm

Marinade Ingredients:

  • 4 tomatoes
  • 1 med red onion
  • basil leaves
  • 2 jalapeno pepper
  • 1 tbsp sesame oil
  • paprika
  • cilantro
  • thyme
  • Italian parsley
  • 1/4 cup red wine vinegar
  • 4 cups low-sodium chicken
  • 1 head of garlic, chopped

Main Dish Ingredients:

  • rack of ribs
  • 1 large sweet potato
  • 1 large zucchini
  • 1 large squash
  • 2 bay leave (take out after cooking and before serving)

Cooking Steps:

  1. Combine all the marinade ingredients and mix well. Add ribs and make sure they are competently submerges, if not add a little more stock or water to make sure it is all covered. 
  2. Marinade for 24-48 hr.
  3. When ready. Preheat the oven to 185 C.
  4. Use a heavy bottom deep baking dish with a tight cover. Chop sweet potato, zucchini, and squash and lay them on the bottom. 
  5. Then add ribs and pore the marinade all over.
  6. Cook for about 3 hr.
  7. Enjoy.
