POPN Paleo | Barbeque Pulled Pork Stew (GF)

My husband got a free Crock-Pot from work so I decided to put it to good use and save time on cooking. Plus, I never done pulled pork so really was looking forward to making some myslef. I typically find that most barbeque sauces are either too sweet, too tangy or just lacking flavor so this time I ventured to do it all myslef and make it a low-carb and high-protein meal – Paleo Barbeque Pulled Pork Stew (GF).

Barbeque Sauce Ingredients:

  • 2 large tomatoes
  • 1 large onion
  • 1 tbsp. celery seeds
  • 1 tbsp. onion flakes
  • 1 tbsp. garlic flakes
  • 4 tbsp paprika
  • 3 tbsp honey
  • 1 tbsp. ground mustard seed
  • 2 tbsp. balsamic vinegar

Stew Ingredients:

  • 1 lb. low-sodium chicken broth
  • 2.5 lb. pork roast shoulder
  • 1 large cauliflower head, cut to floret
  • 4 medium zucchini, sliced

Cooking Steps:

  1. Blend all spices and half of the chicken broth in a high speed blender.
  2. Place pork on the bottom of the crock-pot, layer cut cauliflower and sliced zucchini. Pore barbeque sauce and leftover broth over the meat and vegetables.
  3. Cover and cook in the Crock-Pot on high for 5 hours. You can also use Cast-Iron Dutch Oven. If you are using Cast-Iron Dutch Oven then first bring the stew to a boil then cover and cook on low for 5 hours.
  4. Enjoy!
